Chef Vikas Khanna’s Bungalow is Where Heritage Meets Heart in Every Bite

Date:

Renowned chef and humanitarian Vikas Khanna has once again etched his mark on the global culinary map with his latest venture, Bungalow, in New York City. More than just a fine-dining establishment, Bungalow is an intimate homage to his late sister (who died with an autoimmune disease), a heartfelt expression of his culinary heritage, and a reflection of his deep-rooted connection to Indian culture.

Within just a day of its grand opening, Bungalow earned the prestigious Michelin 2024 Bib Gourmand award and secured a spot on The New York Times’ Top 50 Restaurants list, a testament to its immediate impact and culinary brilliance.

A Culinary Space Built on Love and Legacy

Inspired by his sister’s words, “Don’t make a restaurant; make a home,” Chef Vikas Khanna has created a space that transcends the traditional dining experience. Bungalow is a seamless blend of nostalgia and innovation, echoing the warmth of his grandmother’s home in Amritsar.

From handpicked fresh flowers sourced from India to carefully curated interiors resembling a cozy library, every corner of Bungalow exudes familiarity and love. The ambiance tells a story—of heritage, personal loss, and resilience—inviting diners not just to eat but to experience a home away from home.

A Menu Rooted in Authenticity and Innovation

At Bungalow, Chef Vikas Khanna honors Indian culinary traditions while introducing innovative twists without falling into the trap of buzzwords like ‘fusion cuisine.’ Signature dishes such as Chicken Anarkali, inspired by Dogra cuisine, and Dahi ke Kebab, wrapped in crispy vermicelli, celebrate regional flavors while offering a contemporary presentation. As the chef himself put it in an interview with Conde Nast

“I feel a sense of rebellion in pushing Indian cuisine to the forefront. To be 54, at the top of my game, representing my culture and cuisine in a foreign country, is an honor in itself.

Every plate is crafted with thoughtfulness, balancing bold flavors, texture, and storytelling. Whether it’s a simple bowl of daal or an elaborate tasting menu, Chef Khanna ensures that each dish remains authentic yet accessible, a philosophy that earned Bungalow its Michelin Bib Gourmand recognition.
